Eating only vegetables isn't healthy. We're omnivores, our bodies developed around a diet based on both plant and MEAT... If eating only vegetables were healthy, those who don't want to eat meat wouldn't have to find alternatives for the protein it gives, or take vitamins to replace it.
It's unhealthy to NOT eat meat.
It's funny, I read an article recently how vegetable rich diets in China are leading towards a trend of obesity because of all the oil they use to cook it lol.
I watched this BBC documentary a while back, that in order to continue to develop the precursors to humans had to start eating meat and had to start cooking their food.. They put people in a tent encampment with only raw vegetables to eat for 2 weeks.. They were literally having to eat all day and night, they spent all their waking time chewing and munching away, they had no time for anything else.. They also lost a large amount of weight (20-30 pounds?) but not in a healthy diet and excessive way, in a malnourished sort of way.. They also complained constantly of being hungry and tired, they just could not get enough energy from the vegetables..
The cooking loosens up the nutrients, even in the vegetables. They weren't so readily absorbed raw.. They also tested this in animals, in particular I remember a couple of snakes, one fed raw mice, another fed cooked meat, the one that ate cooked meat was able to grow faster and stronger on less food than the one fed raw mice.
But there you go, if you're really wanting to lose weight desperately, make your diet consist of only raw vegetables/fruits. Not exactly healthy, but people desperate to lose weight generally do far less healthy things.
