It's called speed running and it's art.
Wouldn't really call it art. It's pretty much practice practice practice, with a prescribed route/method, usually with a dash of RNG. It's pretty impressive sometimes, and then other times it's like, "Oh hey, I used a glitch and skipped 82% of the game, including all of the most challenging bosses."

AGDQ is good though, cause money for charity.

The Nier speed runs like to flag as "any ending" when the story is liniar progression and the first two "endings" are really just part 1 and part 2... So they don't even skip 82% of the game, just skip like 25, stop after around the 40% mark, then call it beat lol.

I can understand people finding it enjoyable, some people like dissecting and all it's glitches and bugs. I personally find challenge type runs more far more fun to do or impressive to see other people do though.
