I found one of these at work, used to be a welder or a pump or something. I kinda want it to try to adapt it for a hunting buggy or something.

It's strange to see a V4 with EFI used to for a pump or welder genny. Either way, genny engines are suited to and often only capable of maintaining load based speeds. It's not so much a mechanical limitation as the tuning and management. You'd be better off using an ATV engine for something like that.

The one in the picture is EFI, i just assumed you googled the engine ID or something. If it doesn't use a vane or head pressure load throttle, you could use it for almost anything. If it does, you'd either have to put a different carb on it or rig it up. Surprisingly, though, most modern small engines are rated by torque. Even a relatively small engine like my push mower is 190CC and makes like 1/4th the horsepower of a similarly sized ATV engine which already has the components to power a drivetrain. I've given up on adapting anything to a purpose anymore. I built a shifter go-kart a few years ago with a CR250 engine.
One I found has like an updraft (I think it's called) carb.

Updraft would be incredibly unusual, it's probably downdraft, but that's just the orientation, PM me if you want specifics on how to tell what's going on with it.

Pining for the past is pretty natural. I miss going to the beach with my cousins as a kid. I look back on those times favorably, but if one of them invited me to go to the beach now, I'd think they'd lost their mind, lol.
Ehhh...I mull it over from time-to-time, then I remember how I treated the game when I was frantically trying to play catch-up since I discarded/lost the info for my original character.

It's intake and exhaust manifolds are casted together with the carb hanging under and the exhaust extending upward.

They do that to heat intake air, it's the structure of the carb and it's throttle linkage that matters more than anything. It will also give you an idea of what kind of powerband it has. A vane load setup likely will cap out still deep in the torque range, making it pretty useless for locomotion.
