Digital art is the way to go anyway, IMO.
Drawing on paper you have to worry about the quality of the paper/pencils/pens etc, and if you erase too many times, you could end up messing up the paper and having to start over completely on a fresh sheet, regardless of how good your pencil control is. =/
As for skills, just keep entering and you'll improve in no time! I mean, look at my entries. In only 11 weeks I've gone from this (my Week 40 entry)

I could probably do a lot better, I just don't have the time to invest in it.
For example, I did this one to take a break from that damn subligar quest. My wife is sick and in bed so I had some time on my hands.

yeah my entries have improved, but I've only entered like 5 times, and i've recently got a tablet so the last two are alot better

Pretty much anything that was given dialogue or was part of a story is an npc to me. So I think certain mobs and NMs would be fine too (and interesting :3)
Working on something that I pretty much based the topic on. Not an entry tho cuz I drew it on paper, scanned it, and using photoshop cuz I wanna make it look nice. Had the idea in the back of my head for a while and finally found a reason to draw it lol...
