Lotta that bacon pictured looks over cooked. Maybe this will lead to a debate between crunchy or soft bacon.
Oh man I got this extra thick cut bacon this weekend at the store, it was called "bacon steak." Ii ended up throwing it on the grill with some applewood rub at about 200 degrees with some pecan wood smoke chips. Top it off with a glaze off BBQ sauce. The Bacon gods were smiling.

I like it inbetween.. I like the meaty parts to be slightly crunchy, while the fat is still chewy.
