If you walk away from him actually, he died in 4 seconds and you hear his death rattle.
Might be the only npc death that generates no sin but idk. Upon death he turns hollow so you can come back later in the game to that spot and fight him for his shield
Fair warning though, words of your deeds have reached powerful people by that point so expect a few surprises upon returning

So a pyromancer could level up str and Rex to 40, using every huge insane weapon in game just as easily as a warrior but their vase str and Dex starts a few levels lower that's all
Most of the best weapons in game are crafted or rare drops or in hard to reach locations that's all. There are a few style scythes in game yeah but not much is quest exclusive. A few spells are quest line exclusive but that's usually it.
