Just go in perma airplane mode. Pretty much cuts off all incoming or outgoing signals.

Whoops, didn't notice the texting part. Assuming you're using apple's proprietary messenger service, you should have a function to remove your telecommunication provider while retaining your own connection via wi-fi.
Is it a GSM model ? If so, can take the chip out ?

but the iOS settings for connections state to recieve incoming texts it has to be left on; device is not designed for the usage I'm maintaining

I thought that due to the iPhone being also a music playback device/tablet-ish device which can still buy apps from Apple iTunes they would not apply that "rule" of not operating without a sim card attached.
Lame ... lol How about you taking another chip from another phone ? Do you have any older phones at your place with chips in them ? After the chip "expires" it does nothing but can be used to make the phone turn on, no ?

Basically a shortened "Baby". Which I've always found to be a creepy pet name anyway.
