Each frame of a gif is typically limited to 256 colors, so grainyness occurs due to the color reduction and pixel dithering that the program uses to create perceptual in-between colors due to the limited palette.

Images fades between 2 different images can look extra grainy sometimes if the 2 images have vastly different colors since the limited palette is spread more thinly across a larger color and value space. Just something to keep in mind.
