Actually, there is one manifestation of rice I can stomach, now. I've recently found out that I enjoy sushi.

Majority still use chopsticks yes, simply because it is easy to clean and less to keep up with. But Japanese are not above using forks and knives.

You have not had good sushi till you have had it fresh from a master sushi chef who has spent his life learning and perfecting the craft!

You're right in the thought that it is mostly tradition though. Just those two things are the main reasons i get told by the Japanese. To be fair though, every country has some traditions that they stick to no matter what.
